The Cros Vin du Chalonnaise of the Côte-d'Or are special for me, because it was my first import! The thing I love about The Cote d'OR, is that there is no instant gratification. Burgundy takes it's time and so different from a California or any other wine on the planet. Bourgognes are subtle, elegant and age to perfection. For me, Burgundy is the Creme de la creme, of sophisticated wine, Grand Cru, and life changing.
The Cros are amazing people, friends, and incredible artist in wine, and on painting on canvas!
When I teach classes on Burgundy wine, I use them as a staple.

We sat together 08/29/2015 and translated their story, and personalized wine notes for each bottle. Bernard and Odile Cros, have been making wine for over 35 years in Cercot Moroges and Loire
(Bourgogne/Burgundy-La Côté Chalonnaise) France.
In French their last name (Cros) means “to believe.” They have traveled the world, and uniquely crafted their wine, so well, that it can still be enjoyed today. They live on the same property with their daughter and granddaughter. Relax semi-retired in their lovely home in La Côté Chalonnaise. Bernard also enjoys being an artist/painter, and with Odile visit art festivals and exhibitions all over France. His art is amazing!
They stopped all wine production in 2005.
I am happy to have become friends with these two brilliant winemakers.

The Cros respect lunar cycles of viticulture, enology, and astrological farming. It is a pleasure to discuss calendar weather patterns, moon cycles, eclipses, and the stars to decide when and what to plant. We also agree in biodynamic, and find it fascinating how well everything grows when it is in harmony with the cycles of nature.
Order a bottle or two? Perhaps the the full series of classic vintage, and enjoy their legacy, and “message” in a bottle. They are perfect for consumption and pouring very well.

1. 1996 Bourgogne 100% Aligoté:
Color. Sunny Straw Hay color
Nose. Aromas of Pears and Crisp Granny Smith Apples
Palate. Dry/sec- lite frizzante and effervescent hints of crisp green apples, buerre de sel, brown sugar, caramel, that leaves the imagination to fresh apple pie.
Pairing suggestions with 1996 Aligoté Burgundy:
With appropriate acidity, and subtle minerality...great with mussels w/ garlic toast. You could actually add butter, a dash of this wine, shallots and salt & pepper for a perfect meal. Grilled shallots and scallops or salmon….will leave a smile for days! Another favorite is simply with yummy plump oysters! The perfect balance of acid and fleshy seafood.
2. 1997 Bourgogne Pinot Noir:
Color. Beautiful Ruby Red
Nose. Aromas of Cherries, Red Cassis, and nice minerality
Palate. Red fruit confit, raisins & dried figs, full bodied, low tannins, wet/ mouthing as if you bit into a ripe cherry off the tree or cassis straight from the vines.
Pairing suggestions with 1997 Pinot Noir Bourgogne are as follows:
We enjoyed this with veal, then we tried rack of lamb. Then, I cooked a roasted balsamic garlic chicken with tomatoes and did a side of buttermilk mashed potatoes. Yumm!
3. 1999 Bourgogne 100% Pinot Noir
Color. Classic Burgundy Amber
Nose. Aromas are very jammy, confiture, very red fruit, with a little hint of licorice
Palate. Salty, sweet licorice candy, round mouth, low tannins, elegant, and red fruit on the last taste. Open this lovely bottle 45min - 1 hour before serving. This baby is necessary to decant, a little closed in the beginning. However, when this opens up it is perfect. I could just drink this wine with cheese and be perfectly content.
Pairing suggestions with 1999 Bourgogne are as follows:
We enjoyed salty Charcuterie or Assorted Fromage/Cheese mainly sheep, goat, or blue. Assorted Olives, dates, figs and honey drizzle. Antipasto delicious!!!!

4. 2000 Bourgogne 100% Pinot Noir:
Color. Classic Burgundy Amber Nose. Aromatics of strawberries, cherries, red fruit, minerality Palate. Open this lovely bottle 45min before serving. Decant. This wine is a Drink now. It is perfect. Ripe red fruit, cherry coke, fresh tobacco leaves, medium tannins, very dry….yet complex, and nice red fruit lingering fruit. Pairing suggestions with 2000 Pinot Noir Bourgogne are as follows: I made Pork chops, w/garlic, onions, added roasted pears and sprinkled a little brown sugar on top of the pears (1st pan sear the pork chop, then finish off and roast in the oven w/ fresh cut pears). Perfect pairings! |
5. 2001 Bourgogne Pinot Noir
Color. Beautiful Ruby/ Garnet Jewel like. Nose. Aromatics of strawberries, cherries, red fruit, minerality. Flattering, and very nice on the nose. Palate. Open this lovely bottle 45min-1 hour before serving. Decant. This wine is READY to Drink now. It is perfect. Ripe red fruit, red currant, new leather, fresh cut tobacco leaves, herbs & spices, medium tannins, dry/tart….yet nice ripe, red, engaging fruit lingering on the last taste. Pairing suggestions with 2001 Bourgogne are as follows: Filet mignon cooked in a little wine, olive oil and balsamic vinegar, with patatoes and veggies(see picture), Lamb, Steak, Beef Bourguignon, and Pasta with Veal Red meat sauce(I like to add a little wine to the sauces). Perfect pairings! |
6. 2001 Bourgogne Brut/ Mousseux (Crémant)
Color. Pale hay. Nose. Aromas of crisp granny smith apples, pears, grapefruit, citrus…..lemon/lime. Palate. Crisp green apples, refreshing citrus, tropical effervescence, with a smooth demi-sec/dry- finish. Sips and TIPS: Mousseux Methode traditionenelle, (Traditional Method) or Crèment, also referred to as Sparkling Wine, which is not made in the Champagne region. (Bourgogne) Natural Fermentation in the bottle. Riddled…. (which is the process of rotating the bottles in order to shift the sediment toward the cork) (French word: remuage) Pairing suggestions with 2001 Bourgogne Brut are as follows: Nicely chilled, it pairs well with a nice shrimp and grits. Oysters are divine! For me this paired with oysters…..the acid and creamy oysters complement each other romantically….xo Clams, or mussels with garlic toast as an appetizer….can go along way too! Salmon and pesto pasta. Also a simple goat cheese assorted plate could be a hit! |
